The objectives of this project was to study and design the Gymnema inodorum decne dryer using an infrared burner. The dimension of chamber was 1 m width, 0.85 m length, 1.25 m height, the 4.72 kW infrared burner was used for heating air. The hot air was sucked by centrifugal blower, 12 inches diameter vane with 1 hp AC motor blower. The dryer machine had 18 trays, which could be placed product capacity not exceeded 0.6 kg. Product which had the conditions of initial moisture 250-300 percent dry basis, was dried until final moisture content was 5-10 percent dry basis . The velocity of air inside the drying chamber was 0.2-0.6 m/ s when proportion of recycled air was 70 %. Performance of this dryer at temperature 50,55 and 60oC, took drying time at 320, 240 and 200 minute, when the average drying rates was 1.5, 2.0 and 2.4 kg/hr, and the average specific energy consumption was 26.60, 20.14 and 15.49 MJ/kg, respectively. The economic analysis showed that at the temperatures, 50, 55 and 60oC , the cost of drying per kilogram of evaporation water was 59, 32 and 30.7 baht per kilogram of evaporation water, and payback time was 131, 92 and 89 day, respectively. Therefore, the optimum of drying temperature for this product was 60oC.
